The Rib of Adam
Actually he doesn't eat ribs what with veganism and all. So, these were some Costco bought spare ribs that I had in my freezer for a while. To flavor them, I used a black pepper rub and bbq sauce recipe from a cookbook by Michael McLaughlin. They actually didn't come out all too great because the only grill that we have we found in the basement and is a horrendous piece of shit. It's electric and doesn't get hotter than a hair dryer, so the ribs weren't as tender as they could have been. Eventually I hope to build a smoker out of a trashcan and get a charcoal grill as well.
So for the ribs, I put the rub on,
2 tbs. coarsely ground black pepper
1 tbs. granulated brown sugar
1/2 tsp. salt
1/4 tsp. garlic powder
I then baked them in a 400 degree oven for an hour and a half whilst tightly wrapped in tin foil, then drained the fat out and let cool a bit. Usually you just do country spare ribs the whole time on the grill or smoker and use the tin foil method for baby-back ribs- but this was easier and they can ideally be finished up on the grill at the end, where you apply the sauce over medium heat and turn occasionally for about 15 minutes.

Makes about 7 cups
3 tbs. olive oil
1 cup finely chopped onion
4 garlic cloves minced
1 large fresh jalapeno stemmend and minced
1 (28 oz) can crushed tomatoes with added puree
1 1/2 cups tomato juice
1 1/2 cups ketchup
1/2 cup prepared picante sauce
1/2 cup dry red wine
1/3 cup finely chopped canned chipotle chiles en adobo
1/3 cup unsulphured molasses
3 tbs. apple cider vinegar
2 tbs. packed dark brown sugar
5 tsp. soy sauce
1/2 ts. liquid hickory smoke (found in small bottles in bbq sauce aisle of grocery, lasts in fridge forever)
Cook the onion, jalapeno and garlic in the olive oil over medium heat until soft and tender, about 10 minutes. Add everything else, bring to a simmer, then partially cover and cook for 30 minutes. Cool and transfer to smaller jars and refrigerate.
