Raise the stakes?
Simple cooked in a pan and finished in the oven. I used my handy digital meat thermometer and removed it at an internal temperature of 127. I could have stood it to be even more rare however, so next time I'll reduce that amount. Served along with asparagus marinaded in balsamic salad dressing and oven cooked. Not pictured: roasted potatoes quartered and tossed with olive oil and rosemary. I could have gone for a good creamy horseradish sauce with this. Maybe next time.
